Ingredients: beef – 1 kg , tomatoes – 0.5 kg , walnuts - 100g , onion - 3 pcs. , Rice – 1 cup , saffron – 1 tsp , suneli hops – 0.5 tsp , garlic – 3 cloves, parsley and other greens, red pepper - to your taste.
Cut meat into small pieces, add water and put on medium heat. Chop finely onions and fry in olive oil. Peel tomatoes, grind and add in puree fried onions. Simmer on low heat for 5 minutes. In minced nuts add spices, pepper and mix. When meat is almost cooked, add the rice, onions, tomatoes and nuts with spices, herbs (greens) and season.
Ingredients: young grape leaves – 40-50 pieces, minced lamb – 600 g , onion – 500 g, rice – 4 tbsp, garlic – 1 clove, greens to taste, salt, black pepper, meat broth.
Soak grape leaves in boiled water for 3 minutes. Minced meat mix with thinly chopped onions, add chopped greens and garlic. Rinse rice, pour hot water and leave it for 10 minutes, then pour out excess water and mix rice with minced meat.
Forming dolma: put a tablespoon of stuffing in the middle of grape leaf, fold edges of leaf inside and roll in tight tube.
Saucepan cover with grape leaves and make layers of dolma, pour with beef broth till the broth slightly covers the last layer of dolma . Cover saucepan firmly with lid and cook 40-50 minutes.
Lobio with green beans and eggs
Ingredients: green beans – 200 g, butter – 50 g, egg - 2 pcs, onion – 1, beef broth, fresh greens, pepper, salt - to your taste.
Boil beans till it gets half-soft. Fry sliced onions until golden brown, add a little broth. Add beans, greens into a pan and cook until it’s well done. Beat eggs and add in to pan, stir constantly and fry for a while.
Eggplant with nuts
Ingredients: eggplant - 2 pcs , walnuts - 75g , onion – 1, garlic – 2 cloves, apple vinegar – 0.5 tsp , suneli hops, salt, pepper , fresh greens - to taste, vegetable oil.
Eggplants wash and cut lengthwise into thin plates. Salt each plate. Put some oil in pan, fry plates from both sides, remove excess oil with a cloth . Fry chopped onion, chop nuts and garlic . Finely chop the greens and mix all the ingredients, add spices and vinegar. Stuff with this thick mass each eggplant plate and wrap into a tight roll.
Khinkali (Georgian dumpling)
Ingredients: flour – 3 cups, egg – 1 pc , water – 0.5 cup, beef – 500 g, onions – 500 g , salt, pepper, garlic.
From flour, water, eggs and salt make a very stiff dough, leave it for 30 minutes . Then again knead. Put ready dough aside.
Grind meat through a large grinder, add finely chopped onion, garlic, greens and pepper. Add some water to make it more juicy, add salt.
Divide dough into small equal pieces, and shape each piece into a ball. Using a rolling pin, roll a ball into a round. Place about 2 tbsp filling in center of round, and fold edges of dough over filling, creating pleats in dough as you go, until filling is covered. Holding dumpling in the palm of one hand, grasp top of dumpling where pleats meet and twist to seal pleats and form a knot at top of dumpling.
Bring a large pot of salted water to a boil. Working in batches, boil dumplings until they float and dough gets tender. Drain and serve hot. Season with black pepper.
